Inspector notes: At front counter found a hand sink dump sink and a prep sink. In the prep sink found soiled dishes dish soap and sponge. Witnessed staff washing equipment and put out to air dry. PIC will need to remove soap sponge and drying rack. Please lable sink as prep sink only and have staff use high temperature dishwasher.
