Inspector notes: In the kitchen observed multiple bus trays filled with cooked proteins goat 61F chicken drumbsticks 80F left out at ambient with no active hot holding. Per the person in charge the food had been cooked at or around 10pm. The person in charge was instructed to reheat the foods to 165F and then place them into the hot holding cabinet. Hot hold TCS food at 135F and above.
