Establishment has no approved Alternative Operating Procedure. Observed employee prepare a chicken caesar sandwich. While preparing sandwich operator grabbed the top sandwich bun with bare hands, and while placing fully cooked grilled chicken on sandwich operator used his thumb and index finger to help place chicken on sandwich bread.
