6-1A - proper cold holding temperatures
Inspector notes: EHS observed several TCS items in reach cooler above the required 41 degrees Fahrenheit. The items that were above 41 degrees are listed below: Pack of butter- 48 Chicken Salad- 46 CA- PIC needs to make sure that all cold holding items temperatures are 41 degrees and below. Any items that were prepped the same day have four hours to reach 41 degrees before having to properly discard the item.

EHS informed PIC and PIC stated that they will be ordering a new reach in cooler and discard the old one. CA- EHS informed the PIC to remove any TCS items that is being stored in the reach in cooler that is not working.

Inspector notes: The facility uses a clear curtain to cover the clean dishes. The curtain that was being used was ripped on one side and needed to be cleaned. CA-PIC needs to ensure that all equipment that is being used in the facility is properly working. The reach in cooler needs to to hold all TCS items at 41 degrees and below. Also making sure that nonfood contact items are being cleaned routinely.
