Inspector notes: Observed raw shelled eggs over vegetables, raw beef over salad dressing and next to fruit, and raw chicken stored next to margarine in the walk-in cooler. Food shall be protected from cross-contamination by separating raw foods from ready-to-eat foods. Educated employees on proper food storage and they were given a poster for reference. Reorganize the walk-in cooler.

Inspector notes: Observed a large container of raw diced steak in the walk-in cooler, and another large container of raw diced steak along with a pitcher of beaten eggs in the reach-in cooler not date marked. Refrigerated, ready-to-eat, time/temperature control for safety food prepared and held in a food establishment shall be clearly marked to indicate the date or day by which the food shall be consumed on the premises, sold, or discarded, when held at a temperature of 41°F (5°C) or below for a maximum of 7 days. The day of preparation shall be counted as Day 1. Date mark the food items.
