Inspector notes: Observed establishment utilizing time as a public health control without having written procedures or time labeled on foods using time (pepperoni pretzel and pig-in-blankets). CA: If time as a public health control is used for ready-to-eat TCS food that is displayed or held for sale or service, written procedures shall be prepared in advance, maintained in the food service establishment, and made available to the regulatory authority upon request. The food shall be marked or otherwise identified to indicate the time that is 4 hours past the point in time when the food is removed from temperature control. Partial correction on site - PIC labeled pepperoni bites and discarded the pig in a blankets. Time procedure must be corrected within 10 days.
