Inspector notes: Observed all time/temperature control for safety (TCS) foods in walk-in cooler being cold held above 41°F. Ambient temperature of unit was 47°F with temperature of TCS foods ranging between 44-46°F. TCS foods must be cold held at 41°F or below. COS by discarding. *Although Rule requires cooler to be fixed within 72 hours, cooler must be fixed beforehand as it is the only cooler in kitchen. TCS foods may not be stored in cooler until minimum cold holding temperature can be maintained. Health Authority will follow-up. **Recommending purchase of an additional cooler for kitchen area.
