Inspector notes: Observed second faucet of 3-compartment sink unable to supply water under pressure and faucet at utility sink unable to supply hot water at time of inspection. Corrective action - PIC advised that parts for repair are on site. Inspector will return once repair is complete to verify water under pressure and hot water are supplied to all required fixtures prior to issuing operating permit.

Inspector notes: Observed one reach-in cooler without a thermometer to measure the ambient temperature of the unit and one walk-in cooler with an inaccurate thermometer on the exterior. Corrective action - PIC advised that he would be purchasing thermometers for all cold-holding units. In a mechanically refrigerated or hot food storage unit, the sensor of a temperature measuring device shall be located to measure the air temperature in the warmest part of a mechanically refrigerated unit and in the coolest part of a hot food storage unit.

Inspector notes: Observed food residue on interior of reach-in cooler near cooking equipment in the main kitchen area of the establishment. Corrective action - PIC advised to perform detailed cleaning of cold-holding unit prior to storage of food items. Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.

Inspector notes: Observed not hot water connection at the utility sink and the second faucet of the 3-compartment sink in the main kitchen area. Corrective action. - PIC advised that he has the parts to repair the hot water supply at both sinks. Inspector will return once repair is complete to verify hot water supply and issue food service permit for operation. A plumbing system shall be designed, constructed, and installed according to law.
