Inspector notes: An employee was observed manually washing dishes in the three-compartment sink. The owner provided expired quaternary ammonium (quat) test strips, which prevented accurate verification of sanitizer concentration. The inspector provided quat test strips to measure sanitizer in sanitizer compartment. The quat test strips did not register any concentration indicating that the dishes were not being properly sanitized. The owner added sanitizer to the sanitize compartment, and the inspector provided test strips to verify the concentration. The sanitizer concentration measured at 200 ppm and proper sanitizing procedures were reviewed.
