Inspector notes: Observed several TCS items cold held above 41°F in residential reach in cooler in front food service area, and in reach in cooler at coffee station. TCS food must be consistently cold held at 41°F or below. At the start of the inspection, the residential cooler's ambient air temperature (AAT) was 50°F. The AAT of the coffee station cooler was 43°F. COS by adjusting temperature setting from a 5 to a 6. Must ensure cooler AAT setting is cold enough, or replace cooler. For the coffee station cooler, COS by moving TCS items to coolers in main kitchen area. Must ensure AAT is set to a degree that can consistently cold hold TCS food at 41°F or below before placing TCS food back within it.
