Inspector notes: Observed sliced tomatoes, shredded lettuce, and spinach in prep top cooler on make line at 48F, 51F, and 52F, respectively. Advised PIC that cold TCS foods must be held at 41F or below. PIC discarded affected foods and replaced with new product at the appropriate temperatures.

Inspector notes: Observed meat cooler beside slicer not operational with TCS foods stored inside. PIC stated food items were held using time as a public health control. Establishment had no pre-approved procedures for TPHC, no records, and no time markings. Advised PIC that prior authorization must be given before beginning use of TPHC, written procedures must be available, and labels and records must be kept. PIC discarded foods in cooler and changed procedure to keep food in reach in cooler in the back of the kitchen until a repair could be made.
