Inspector notes: Observed two opened cups sitting above the prep top cooler without a lid. Advised PIC to make sure that all employees know to use a single service cup with a lid and straw. The cup must be stored in a designated area and not in a food area. The cups were discarded (COS).

Inspector notes: Observed front-end staff (servers) in the kitchen handling food items without a hair restraint. Hair was not pulled back or restrained. Advised PIC to make sure all staff in the kitchen handling or preparing food wear a hair restraint.

Inspector notes: Observed utensils for the rice being held in water at 115F. The water was not heated beyond 135F before placing it in the crock pot. PIC heated some water on the stove and placed it in the crock pot to properly store at 135F or above (COS). Also, observed plastic cups and a metal pan being used to scoop mixed vegetable and dry products such as flour. Advised PIC to make sure to use a scoop with with the handle stored upwards (COS).
