Inspector notes: Observed items that were moved from the maketable(not maintaining temperature) stored in the walk in cooler. (f) Time/Temperature Control for Safety Food, Hot and Cold Holding. Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below. EHS informed the male cook of the need to discard the items as the were ranging from 52-56F; he counted and then discarded items.

Inspector notes: Observed gaps in hood panels/damaged hood panels. (a) Good Repair and Proper Adjustment. 1. Equipment shall be maintained in a state of repair and condition. EHS informed the PIC; he stated that new ones had been re-ordered and that the servicing company keeps damaging the panels.
