Inspector notes: Observed potentially hazardous TCs foods improperly cold holding above 41F in the single door reach-in cooler (sliced cheese, shredded cheddar cheese, shredded mozzarella, ranch dressing, milk) and single use whipped butters with label that states "perishable keep refrigerated" stored on dry storage shelf. See temp log. CA: Cold held TCS foods shall maintain an internal temperature of at least 41F. COS: Milk was discarded due to date marking violation. Whipped butter was out of temp for more than 4 hours and PIC discarded. All other foods were out of temperature for less than 4 hours and were rapidly cooled. Discussed use of time control for whipped butter.

Inspector notes: Observed opened gallon of milk bearing no marked expiration date (PIC stated it was probably opened two days ago) and held past the printed manufacture's expiration date of 12/24. CA: TCS foods that require date marking upon prep/opening shall be labelled with an expiration date not to exceed 7 days. COS: PIC discarded milks.

Inspector notes: Observed no sanitizer test strips available at the facility for testing the lactic acid sanitizer that is set up through a mechanical dispenser at the three-compartment sink used for manual ware washing and filling sanitizer buckets. CA: A test kit or other device that accurately measures the concentration in mg/L of sanitizing solutions shall be provided. COS: PIC will order test strips as soon as possible.

Inspector notes: Observed ceiling vents in the kitchen with visible dust and debris built up in and around them where food and clean equipment is stored directly below. CA: Observed ceiling vent directly above clean dish storage with significant dust build up in and around the vent. CA: Vents shall be cleaned and filters changed to they are not a source of contamination. COS: PIC will have vents cleaned and filters changed.
