Inspector notes: Improper cooling temperature for chicken. Chicken was cooked at approximately 9:00am, at 2:30 was still between 70 and 77 degrees F. Had PIC recook chicken to where it held at a temperature of 165 degrees F for 15 seconds. Started cooling method over again. Provided hand-out to staff on cooling procedures.
