Inspector notes: Observed several datemarked items in the second RIC that were marked 4/24, 4/26 and 4/29. 1. A food that requires datemarking shall be discarded if it: (i) Exceeds 7 days, not including the time that the product is frozen; P (ii) Is in a container or package that does not bear a date or day; P or (iii) Is appropriately marked with a date or day that exceeds 7 days . P PIC discarded the mentioned items.

Inspector notes: Observed several sani buckets that were above and below the recommended range. Recommended range is 200 - 400 ppm. 2. Cloths in-use for wiping counters and other equipment surfaces shall be: (i) Held between uses in a chemical sanitizer solution at a concentration specified under DPH Rule 511-6-1-.05(6)(n); and (ii) Laundered daily. PIC had the sani buckets remade to reflect the proper concentration.

Inspector notes: Observed an expired food service permit in the facility. Upon further investigation, EHS discovered the facility has not paid since 1/15/23. 1. Post the permit in a location in the food service establishment that is conspicuous to consumers PIC will have the food service permit fees paid by the close of business tomorrow. Legal Notice issued.

Inspector notes: Observed a broken gauge on the dishwasher for the kitchen. EHS tested the dishwasher with a sticker to determine if the machine was up at least reaching 160 F. A warewashing machine shall be equipped with a temperature measuring device that indicates the temperature of the water: 1. In each wash and rinse tank; Pf and 2. As the water enters the hot water sanitizing final rinse manifold or in the chemical sanitizing solution tank. Pf PIC contacted their vendor to service the dishwasher.
