Inspector notes: Observation: Observed residue accumulation on the interior surface of multiple microwave ovens on the main cook line. CA: Equipment food-contact surfaces and utensils shall be clean to sight and touch. COS: No COS noted at this time. The interior ceiling of the microwave ovens must be removed to be properly cleaned and sanitized. The facility will remove the part to properly clean and sanitize it. This will be rechecked by the Health Department.

CA: A test kit or other device that accurately measures the concentration in mg/L of sanitizing solutions shall be provided. COS: No COS noted at this time. Sanitizer test strips capable of testing quaternary ammonium were provided to the facility. The facility must obtain a chemical test kit to properly verify sanitizer concentration. This will be rechecked by the Health Department.
