Employee had items stacked high in the prep-top cooler where is was unable to maintain temperature at 41 F or below. CA: Items in prep top cooler were placed in at 10:45, PIC used time as a public health control and will discard remaining product at 2:45. Observed green beans in walk-in cooler at 51 degrees F. CA: PIC discarded affected item. Educated PIC on maintaining temperatures at 41 degrees F and below.
