Inspector notes: Observed steam wells holding various marinara sauces below hot-holding temperature. Items were from 109F to 115F. CA: PIC reheated identified items to 165F to where held for 15 seconds. RCA: Educated PIC on having employees ensuring correct temperatures before placing product into steam well. Note: Water in steam well was also not warm. Holding at approximately 130F. PIC adjusted temperature.

Inspector notes: Observed scoop not stored in clean dry location. Scoop for mashed potatoes was stored on lid. Lid had excessive amount of food product built up. CA: PIC removed scoop (and lid) for wash, rinse and sanitize. Replaced with clean scoop. RCA: Educated PIC on proper storage of in-use utensils. (In food product with handle facing out, in clean dry location, or hot held about 135F).
