Inspector notes: EHS observed the salad area (front food service). There was bread stored without any covering. CA-EHS questioned the PIC about what they are going to do with the bread. He stated they take the bread and cook it and serve it. EHS informed PIC that the bread needs to be covered to reduce any possible contamination from happening.

Inspector notes: EHS observed the microwave located in the salad prep area is in need of a cleaning. There was debris all inside of the unit. Also when EHS walked into the walk in cooler there was several containers with spills and food debris on top of it. CA-PIC needs to make sure that employees are routinely wiping down the container to reduce spills and food debris from being on the lids.
