4-2B - food-contact surfaces: cleaned & sanitized
Inspector notes: Observed build-up on the baffle and inside of the ice machine at the server station. RCA: Unit shall be emptied, washed, rinsed and sanitized. Unit shall be cleaned at a frequency that prevents build-up and contamination of ice. Equipment food-contact surfaces and utensils shall be clean to sight and touch.

Inspector notes: Observed facility did not have high heat testing for the dishwashing machine in main kitchen. RCA: A test kit or other device that accurately measures the concentration in mg/L of sanitizing solutions shall be provided. In hot water mechanical warewashing operations, an irreversible registering temperature indicator shall be provided and readily accessible for measuring the utensil surface temperature.
