To cool as required, loosely cover the container until cool and if during cooling monitoring it is found cooling is not rapid enough, dividing the product into smaller portions and using a container that facilitates more rapid heat transfer (metal) may be more efficient. COS: CFSM split pasta in hotel pans for rapid cooling.
