Inspector notes: Observed pork ribs that were removed from the WIC and placed at the prep top in the main kitchen with a temperature above 41*F Observed several foods stored in the WIC in the main kitchen with a temperature above 41*F See temperature chart below C/A Time/Temperature Control for Safety Food, Hot and Cold Holding. Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F COS Owner discarded all the items Update: EHS did an informal visit on 08/12 to ensure the WIC has been repaired.
