Chemical sanitizers, including chemical sanitizing solutions generated on-site, and other chemical antimicrobials applied to food-contact surfaces shall: 1. Meet requirements specified in 40 CFR 180.940 Tolerance exemptions for active and inert ingredients for use in antimicrobial formulations (Food-contact surface sanitizing solutions) OBSERVATION: wiping cloth solution was over 200ppm chlorine. COS- employee discharged some of the water and added plain water, reading now 100ppm chlorine. Discussed with the PIC to always check the solution before adding towels to ensure that it was between 50-100ppm chlorine.
