Inspector notes: Observed chicken and soup in warming cabinet hot held at or below 41F. Cabinet thermometer was not displaying, and unit was only warm to touch. Advised PIC to repair/ adjust unit and provide thermometer for inside the unit. COS- per cook, foods were cooked less than an hour ago, foods placed in refrigerator to cool to 41F or below.
