Inspector notes: Observed food items (ribs, brisket) wrapped and sitting at room temperature waiting to go the warmer cabinet. Upon conversation with staff, the items were left at during the lunch rush and they began wrapping the items afterwards. Observed food items (sausage, chicken, brisket, pork) not holding in the warmer cabinet at 135 or above. CA: Items from that were sitting out and in the warmer cabinet were placed back in the smoker to be brought back to 165F. Time/temperature control for safety food shall be maintained at 135°F (57°C) or above.

Inspector notes: Observed the hand sink in the front food service area not operable and leaking at te pipe. Inspector was unable to wash hands or verify hot water working at the sink due to the leak. A handwashing sink shall be maintained so that it is accessible at all times for employee use.
