Inspector notes: Observed leftover pulled pork and beans having been prepared Wednesday at cold holding temperatures of 43-47F. Foods surrounding were found to be in temperature compliance as was walk-in ambient temperature. Food was determined to have been improperly cooled. COS CA: PIC discarded food. Cooked time/temperature control for safety food shall be cooled (i) Within 2 hours from 135°F (57°C) to 70°F (21°C); and (ii) Within a total of 6 hours from 135°F (57°C) to 41°F (5°C) or less.
