Inspector notes: Observed employee wiping counters with wiping cloth from sanitizer bucket at 0ppm. Food contact surfaces should be cleaned and sanitized in a two step method in where one cloth is used for the food debris followed by a second cloth used to sanitized the food surface, sanitizing solution is sprayed onto the surface and the surface is then wiped clean with a disposable towel or cleaned/sanitized with EPA approved disposables wipes. PIC recleaned counter tops with sanitizing solution.
