Inspector notes: Observed bulk ice machine interior ice chute with heavy build up - back up ice needs to be used and unit needs to be shut down cleaned and sanitized on a more frequent routine to avoid build up recheck within 72 hours.

Inspector notes: Observed food racks from oven and food rack in walk in cooler sitting directly on floor. & sitting within 2 inches of the floor. Food storage racks need to be a minimum of 6 inches off the floor. PIC shall correct within 10 days.

15B - warewashing facilities: installed, maintained, used; test strips
Inspector notes: Observed Quatz being used at 3 compartment sink with out having proper test strips available. Then EHS went to test sanitizer solution in bucket and PIC did not know what sanitizer was used in the bucket... A clorox bottle was less than 5 ft away.. If Clorox is to be used then proper test strips for chlorine based sanitizer also need to be on site and be utilized to test concentration levels. PIC Discarded unknown water and made Quatz water while on site.
