Inspector notes: Observed no handwashing sign posted to indicate where employees are required to wash their hands. RCA: Where to Wash. Food employees shall clean their hands in a designated handwashing sink or approved automatic handwashing facility and may not wash their hands in a sink used for food preparation, warewashing, or in a service sink or curbed cleaning facility used for disposal of mop water or similar liquid waste.

Inspector notes: Observed facility did not have high heat testing for the dishwashing machine in bar area. RCA: A test kit or other device that accurately measures the concentration in mg/L of sanitizing solutions shall be provided. In hot water mechanical warewashing operations, an irreversible registering temperature indicator shall be provided and readily accessible for measuring the utensil surface temperature.
