Inspector notes: Observed raw chicken stored next to uncooked bacon at front food service reach-in unit. Observed tuna stored next to avocado of reach in unit. Observed raw shrimp stored next to sliced beef in reach-in unit in the back of facility. COS: PIC moved bacon to reach in cooler and stored above chicken. Shrimp was moved above the beef and pork. Tuna was removed and placed in reach in cooler at the back of facility. CA: All food items shall be stacked according to internal cook temperatures.

Inspector notes: Observed dish washer to not be pulling enough sanitizer. Upon further inspection, it was found that the sanitizer container was low. A kitchen staff member replaced the container, but the dish washer was still unable to show proper sanitization levels. RCA: PIC shall have the chemical service representative repair the unit. Dishwasher is notto be used until repaired.

Inspector notes: Observed hand sink at the front service area to not have hot water above 100F. PIC stated the sink in out of order while they are waiting for it to be repaired and they are using the back kitchen hand sink. RCA: Hand sink shall be repaired as soon as possible for easy accessibility for front service staff. Hand sink will need to be repaired by the next routine inspection to avoid informal hearing. A handwashing sink shall be equipped to provide tempered water at a temperature of at least 100ºF (38ºC) through a mixing valve or combination faucet.
