Inspector notes: Food shall be protected from contamination by storing food in packages, covered containers, or wrappings. Observed container of raw chicken wings stored uncovered in walk-in cooler & containers of flour & other dry goods stored uncovered in prep area. Advised PIC to cover containers with tight-fitting lids or wrapping.

Inspector notes: Refrigerated, ready-to-eat, time/temperature control for safety food prepared and held in a food establishment for more than 24 hours shall be clearly marked to indicate the date or day by which the food shall be consumed on the premises, sold, or discarded. Observed containers of marinating chicken bearing no date mark. PIC created appropriate labels for affected containers.

Inspector notes: During pauses in food preparation or dispensing, food preparation and dispensing utensils shall be stored in the food with their handles above the top of the food; only with a food that is not time/temperature control for safety food. Observed scoops stored in containers of sugar, flour, & chicken with handle resting in the food. Advised PIC that handles must remain above the top of the food & can only be stored with foods that are non-TCS. PIC removed utensils from chicken & replaced utensils in flour & sugar with new, clean utensils stored correctly.

Inspector notes: Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Observed buildup of residue & debris on wire storage racks, equipment handles, & floors. Advised PIC to deep clean facility and implement more frequent cleaning schedule.
