Inspector notes: Observed prepared TCS items that were date marked to be held longer tha 7 days (example, Gumbo that was prepared on 1/27/2026 but was marked to be discarded on 2/12/2026), observed unmarked opened, manufactured TCS foods that were not date marked, and observed that the facility was inconsistently dating items with some items have both the date of preparation and some only having a single date. Inspector notes: Observed that the wet wiping cloths in the facility were stored in water with no sanitizer solution in them; observed wet wiping cloth hung over the side of buckets so that they were not submerged in the sanitizer solution. COS. After running the chemical mixers for several minutes, the sanitizer solution did start to come out at the right concentration; new sanitizer solutions were made and all wet wiping cloths placed into them. Code: Wet wiping cloths shall be stored in sanitizer solution between uses that is at the appropriate concentration.
