Inspector notes: Observed mechanical dishwasher to have 0ppm of sanitizer. RCA: PIC shall have dishwasher repaired and use 3-compartment sink with proper ppm to wash, rinse and sanitize. Dishwasher shall have proper concentration of sanitizer at all times.

Inspector notes: Observed ice machine to have mildew-like substance build-up on the baffle. RCA: PIC shall have ice machine cleaned and sanitized. PIC shall burn the ice, wash machine, and sanitize. The first batch of ice shall be thrown out. Second batch of ice shall be used. In equipment such as ice bins and beverage dispensing nozzles and enclosed components of equipment such as ice makers, cooking oil storage tanks and distribution lines, beverage and syrup dispensing lines or tubes, coffee bean grinders, and water vending equipment at a frequency specified by the manufacturer; if manufacturer specifications absent, at a frequency necessary to preclude accumulation of soil or mold.

Inspector notes: Observed many TCS items to be above 41F in prep-top cooler closest to microwave. (Sausage 50,F marinara 51F, shredded cheese 51F). RCA: PIC discarded all items above 41F in prep top cooler. PIC shall repair or replace broken prep-top cooler and keep TCS items that are usually stored in broken prep top to a functional cooler.
