Inspector notes: Upon arrival, four individuals not involved in food preparation or handling were observed standing inside the main kitchen area. COS, all non-food employees left the kitchen area. Persons unnecessary to the food service establishment operation are not allowed in the food preparation, food storage, or warewashing areas, except that brief visits and tours may be authorized by the person in charge if steps are taken to ensure that exposed food; clean equipment, utensils, and linens; and unwrapped single-service and single-use articles are protected from contamination

Inspector notes: Observed employee placed hair into a ponytail and put on hat, employee proceeded to handle food prior to washing hands. COS employee ceased food handling and washed hands. Food employees shall clean their hands and exposed portions of their arms immediately before engaging in food preparation including working with exposed food, clean equipment and utensils, and unwrapped single-service and single-use articles and after touching bare human body parts other than clean hands and clean, exposed arms.

Inspector notes: Observed grease build up on walls and exterior of microwave next to fryers. Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.
