Inspector notes: Observed employee handle sanitizer cloth with gloved hands then proceed to cook seafood at stove without removing gloves, washing hands, and donning new gloves first. CA: If used, single-use gloves shall be used for only one task such as working with ready-to-eat food or with raw animal food, used for no other purpose, and discarded when damaged or soiled, or when interruptions occur in the operation. COS: PIC had employee remove gloves, wash hands and don new gloves before handling food.

COS: PIC had employees drain and remake sanitizer to manufacturers recommended concentration.

Inspector notes: Observed frozen crab legs thawing in three compartment sink without sufficient water velocity to agitate and float off loose particles in an overflow. CA: Time/temperature control for safety food shall be thawed completely submerged under running water at a water temperature of 70°F with sufficient water velocity to agitate and float off loose particles in an overflow. COS: Employee put crab legs in container to allow proper velocity to overflow loose particles.
