Observed sanitizer solution in bucket located in main kitchen area is too weak. Sanitizer solution should be between 50-100 ppm if using chlorine solution, or 200-400 ppm if using quat solution. PIC remade sanitizer solution in bucket. Observed black residue on a nozzle of a coke dispenser located in front service food area. Food contact food surfaces must be clean to sight and touch. PIC properly cleaned and sanitized nozzles of coke dispenser.

Inspector notes: Observed multiple TCS foods held more than 24 hours in reach in cooler next to oven area in main kitchen and in reach cooler in main kitchen with no discard dates. 1. Except when packaging food using a reduced oxygen packaging method, and except as specified in paragraphs 5 and 6 of this subsection, refrigerated, ready-to-eat, time/temperature control for safety food prepared and held in a food establishment for more than 24 hours shall be clearly marked to indicate the date or day by which the food shall be consumed on the premises, sold, or discarded, when held at a temperature of 41°F (5°C) or below for a maximum of 7 days.
