Inspector notes: Observed the three compartment sink in-use to wash, rinse, and sanitize dishware without proper levels of sanitizer. Observed a large air bubble in the sanitizer dispenser line. COS sanitize compartment drained and refilled manually. Concentration checked via test strips to be 300-400 ppm. Dishware will be rewashed and sanitized. Work order will be placed for dispenser.
