CA: Cold TCS foods are to be held at 41*f or below TCS foods may not be stored in top section of display cooler. [Top section of display cooler is not maintaining TCS food temperatures below 41*f] TCS foods stored in top of prep cooler were discarded. Display cooler was overstocked - prevent efficient cold air flow to upper sections of cooler. [ambient temperature 39*f]. PIC removed many bulk cheeses and deli meats were moved to walkin cooler.
