Inspector notes: Observed improper cold holding of potentially hazardous TCS foods in the reach-in cooler (cooked sweet potato mixture 45F, cut collard greens 49F). Air temp in the unit was at 52F. CA: Cold held TCS foods shall maintain an internal temperature of at least 41F or lower. COS: Collards were out of temp for more than 4 hours and were discarded. Sweet potato mix was moved to the freezer to rapidly cool. PIC lowered thermostat setting on the cooler and the air temp dropped below 41F.
