Inspector notes: Observed cooked poultry not held at 135F or above. Observed a batch of wings being "hot held" on the countertop with no heat source for maintaining temperature. Wings were found to have an internal temperature of less than 135F (i.e., 116F, 127F, 125F, 122F, etc.). Hot held items must be maintained at a temperature of 135F of higher. Dispose any out of temperature wings. Advised utilizing a heat source for hot holding or cooking the wings to order and serving once fully cooked.
