Inspector notes: Observed food being cooled by nonapproved method in large amount in pots with lids and temperature not being monitored. Discussed cooling in thin, shallow pans, separating into smaller portions, loosely or not covered, and ensure temperature is monitored. Product was divided in to small pans, uncovered and placed in an ice bath and freezer to rapidly cool.
