Inspector notes: Observed meatballs stored in chef base measuring 70F. According to PIC the meatballs were prepared and cooked the day before at around 5PM. According to PIC he was not sure what happened between yesterday and today. CA: Cooked time/temperature control for safety food shall be cooled: Within 2 hours from 135°F (57°C) to 70°F (21°C); and within a total of 6 hours from 135°F (57°C) to 41°F (5°C) or less. COS: PIC voluntarily discarded the meatballs.
