Inspector notes: Observed trays not being sanitized after being washed and rinsed. CA: PIC indicated that the third basin was unable to be filled due to backflow issues when draining. There is a three-compartment sink and a single basin spray sink next to each other in ware washing area. Facility shall use the spray sink as the was basin, the second as the rinse and the third as the sanitize.

Inspector notes: Observed front display unit not capable of maintaining proper temperatures of 41F or below. CA: PIC found condenser to be smoking. PIC moved all product from unit that was just played within into working cooler. Cooler shall not be used until repaired.

Inspector notes: Observed three-compartment sink not utilizing all three basins during service. Upon further conversation with PIC, PIC indicated when all three-compartments are used, it causes backflow to occur into basins. Observed three-compartment sink to not be properly protected from back flow through the use of an air break. RCA: Facility shall provide documentation of a scheduled service to repair the grease trap and create proper backflow prevention. This shall be provided to area inspector by end of week.
