COS: Can opener blade was placed in 3-comp sink to be washed, rinsed and sanitized.

Inspector notes: Observed all four chemical (quat) sanitizer buckets at 0pmm. CA: Cloths in-use for wiping counters and other equipment surfaces shall be held between uses in a chemical sanitizer solution at required concentration (200-400ppm quat). COS: No correction on site can be observed. Facility will receive quat sanitizer from another local Little Caesar's. This will be rechecked by health dept.

Inspector notes: Observed evidence of water leak in dish area. PIC states water overflows at air gap when sink is drained and that work order has been submitted for repair. CA: Equipment shall be maintained in a state of good repair. COS: PIC assigned employee to squeegee and mop up standing water in floor. Health dept will return to recheck repair on water leak.

Inspector notes: Observed black build-up on nonfood contact surfaces of can opener near pizza prep area and on can opener holder/base near dough station. CA: Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris. COS: PIC assigned employee to clean and sanitize nonfood contact surfaces of both can openers.
