Inspector notes: Observed several Time/temperature for Safety (TCS) food items above 41 inside the prep top cooler and reach in cooler of the unit. Observed Pizza sauce (50°F), Mozzarella cheese (60°F), Pepperoni (58°F), and beef crumbles (63°F). Observed chicken wings (48°F), Mozzarella cheese (46°F) inside the reach-in portion of the unit. The ambient air temperature of the unit is 60°F. Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F. Per the Person in charge (PIC) the food items inside the unit were there since the previous night. Instructed PIC to discard food items. PIC adjusted the temperature of the unit. Have the unit serviced/repaired by a reputable company.
