Inspector notes: Observed that the mechanical warewasher in the kitchen was not properly dispensing sanitizer; ran the chlorine dishwasher many times and was unable to get a reading on chlorine test strips on neither the items that were coming out of the warewasher nor surfaces inside of the washer. COS. Manually sanitize items until the warewasher can be serviced. CA: Mechanical warewashers shall dispense sanitizer at the appropriate concentration and with enough pressure to ensure items that are washed come into contact with the sanitizer.
