Inspector notes: Observed uncovered food items stored on prep surface (container of spices) and in reach-in coolers near cooking equipment (raw chicken wings, raw chicken breasts, breaded patties, salmon egg rolls, and red bean balls). Corrective action - PIC advised to cover foods during storage and display when not actively dispensing them. Except as specified under paragraph 2. of this subsection and when cooling as specified in DPH Rule 511-6-1-.04(6)(e)2.(ii), storing the food in packages, covered containers, or wrappings, except for loosely covered or uncovered containers in which food is being cooled if protected from overhead contamination;

Inspector notes: Observed foods in walk-in cooler labeled with dates greater than 7 days in the past (collard greens dated 1/16, pork cheeks gravy dated 12/19). PIC reported that those items had been frozen and had not been stored in the walk-in cooler since the date indicated on the label. Corrected on site - PIC discarded foods.
