COS: Fries and chicken discarded, surfaces cleaned and sanitized. EHS instructs management to remind staff about the dangers of salmonella in raw chicken and the importance of food separation to avoid cross contamination. CA: Food shall be protected from cross contamination by separating raw animal foods during storage, preparation, holding, and display from other types of food that might be susceptible to contamination.
