Inspector notes: Observed there to be no hand drying provision at the hand sink. Using a Handwashing Sink- Operation & maintenance (Pf) (o) Using a Handwashing Sink. 1. A handwashing sink shall be maintained so that it is accessible at all times for employee use. Pf 2. A handwashing facility may not be used for purposes other than handwashing. Pf 3. An automatic handwashing facility shall be used in accordance with manufacturer’s instructions. Pf Note: Facility shall install a hand drying provision at the hand sink to facilitate proper hand washing.

Inspector notes: Observed wiping clothes being stored in a sanitizer bucket with solution which measured at 0ppm chlorine. PIC stated they used chlorine sanitizer for the solution. Wiping Cloths, Use Limitation (C) (m) Wiping Cloths, Use Limitation. 1. Cloths in-use for wiping food spills from tableware and carry-out containers that occur as food is being served shall be: (i) Maintained dry; and (ii) Used for no other purpose. 2. Cloths in-use for wiping counters and other equipment surfaces shall be: (i) Held between uses in a chemical sanitizer solution at a concentration specified under DPH Rule 511-6-1-.05(6)(n); and (ii) Laundered daily. COS: PIC remade the solution and it tested at 50-100ppm chlorine.

Inspector notes: Observed a large hole in the roof of the attic of the facility. PIC stated that building management refused to repair the hole due to the upcoming demolition of the building. Except as specified in paragraphs 2 through 5 of this subsection, outer openings of a food service establishment shall be protected against the entry of insects and rodents by: (i) Filling or closing holes and other gaps along floors, walls, and ceilings; (ii) Closed, tight-fitting windows; and (iii) Solid, self-closing, tight-fitting doors. Note: Facility will repair the hole to fully seal the facility.
